Hey,

if this YT channel is not child of a brand account, there's no way to allow my other account to stream from Stadia to the YT channel? That would be really useful for people that play on a personal account and stream on a specific other one

Same happened to me on Reddit. I was literally giving feedback (mostly positive, a few negatives) about the service, offer and UI/UX. Just wow.

This might indicated that your WiFi, although very fast 99% of the time, has critical speed drops for a few seconds. I had the same issue with a defective wifi router.

Chrome extensions and VPNs, as well as special OS WiFi settings can also cause the issue.

Is it possible to link Stadia to a YT channel that's not from the same Google account as the one used by Stadia ?

If your Play balance is sufficient it should appear as an option. Check your Play and phone settings. Does Play appear as an option if you try purchasing a sub in another app than Stadia ?
