Why is it not possible to get the sound streamed to the other google smart speakers like chromecast audio or google home?

Likely because it would be extremely difficult to keep the sound in sync with what's happening on the screen, and complicated to set up with screens and devices moving around and such. That being said it wouldn't hurt for you to leave this feedback using the send feedback feature in the Stadia app to have your request on the teams radar.
