So, I was trying to play Embr, which I have stadia pro so the games free. But whenever I try and play the game from stadia source it keeps going to DOOM 64 which I don't have and don't want. Help?

Why are you trying to launch it from Stadia source? Go to stadia.google.com and launch it from the official / proper place.

I can't, it says I need to update my browser but when I look at the updates it says i'm at the latest version.

What device are you using?

There are alternatives to use.
For example you could use the Microsoft Edge browser if you are on Windows 10.
