If you claim a game for free as part of your Pro subscription, you will lose access to that game if your subscription lapses. If you start back up again, you will regain access to any previously claimed. If you let your Pro subscription lapse, you will also be able to purchase any previously claimed games to be able to play them again and all progress will carry over.
If you paid for any games that had a Pro discount on then, you WILL be able to access these games even if you're no longer a Pro subscriber. The reason is that your Pro gave you access to the discount, but you have still bought the game and your access won't be removed.
In your example above, you will lose access to F1 but keep access to Ghost Recon. I hope this makes sense.

In that case, a mic like this will not currently work with the Stadia controller as it looks for a headset (the 3.5mm jack is set up differently for a solo mic, headphones and a headset), so this isn't something that's easy to force.
You might have some luck using an adapter that takes an input from a separate mic and headphones and converts them to a single 4-pole 3.5mm jack. I have just tested myself and it worked with the mic and headphones that were separate, but this is a workaround and I cannot guarantee it'll work for you.
I'd also recommend leaving some feedback through the Stadia App as something you'd like adding full support for in the future

I've had a look around and this doesn't seem to be a Stadia specific bug as there are other people reporting it (example: https://forums.ubisoft.com/showthread.php/2120160-Interaction-menu-bug-(And-how-to-recreate-it ).
There are a few workarounds posted such as jumping off something high to trigger the roll animation and seems to be caused by using accessories in your inventory (again, from what I have read from a Google search).
I'd recommend raising it with Ubisoft support to see if they have an alternative fix.

It's odd that you're seeing such low quality as Stadia genuinely looks quite impressive for me, for example here's a side-by-side of Cyberpunk comparing it running on my PC and Stadia at 4K and it's not blurry at all.
I might be able to help troubleshoot for you, but in order to do so, could you please provide some additional information?
Device being used (including make and model where appropriate)
Browser if appropriate
Any Stadia extensions being used if appropriate
Full details of any errors being shown
Wireless/Wired connection

AVICII Invector is a rhythm game that will have you using buttons in time with music and having to react to what's happening on-screen so a good one for general co-ordination.
To get used to the joysticks, try something like Enter The Gungeon. It will be a trial by fire though as it's fairly fast paced, but you'll get a load of practice co-ordinating joysticks in different directions.
Finally a platformer like Ary and the Secret of Seasons is a more relaxed experience to get used to just playing games on a controller in general!

Last I can see, an Ubisoft Support Staff member has passed the information onto the team about 3 weeks ago, but can't see a further update.
This is something you'd need to reach out to Ubisoft to resolve, I'm afraid. Also, possibly try some of the suggestions in the forum post I linked above.

Honestly, I think this would be perfect for Stadia. You can already do it with Steam using Remote Play Together.
