I have a ‘hackintosh’ which is pretty low spec compared to modern Macs and an M1 Mac mini. Both can play Stadia without issue but only via Ethernet.  I used h264 on the hack and hardware VP9 on the M1.  I really needed the Stadia enhanced plugin to help diagnose the issue so can really recommend it.
