The "lag" problem you're describing. Does this happen when you load the game and spawn in? EG. everything really stutters, and the frame rate drops massively? If so, this is likely an issue with the game engine and not your connection. Seems like Giant's ancient game engine loads shaders and textures on the fly as soon as you spawn in, so basically it's loading the environment on the fly into memory. Seems like the Stadia hardware can't handle the load and lags and stutters. I've also seen reports of PC players on mid to low end hardware saying the same. It's an issue I'm sure Giants know about but can't be bothered to fix, since they'd need to optimize the way the game engine works, and I guess that's too much like hard work. Since patch 1.3 they introduced even more bugs and now the game full on crashes on Stadia after 5 minutes of play. Giants have a horrible, old game engine, that's way past it's sell by date and needs a massive overhaul, however they won't do it because Farm Sim is the cash cow that keeps on giving, and it's too much effort for them.
