Good news! In the latest version for Baldur's Gate 3 it seems this issue is fixed (at least for me). I started a session to try out Patch 4 and changed the keybindings for turning the camera left & right, but then didn't have time to finish setting up my character, closed the session and started a new one today, and low and behold the keybindings stayed the same!
