I spent severally hours playing on my Pixelbook last night so that shouldn't be an issue.  Are you getting errors when you try to launch a game?
The "on a phone" section here indicates that you need a Pixel in order to play Stadia games on your phone: https://support.google.com/stadia/answer/9338852

Yep, it sounds like you've missed a lot of Stadia coverage since June.  The monthly subscription gets you early access, 4K, selected free games, and discounts on other games. More free titles should be added in the future, but the principle way to get games is still to purchase them. Once the free tier goes live next year you will be able to purchase and play games without the monthly subscription - but you also won't get any free titles, discounts, or 4K.
Yep, that should work fine. You'll just need to connect it with a USB cable for now.

Were you able to set up your controller with your phone's Bluetooth turned off? Because I sure wasn't.    This suggests to me that it's actually using Bluetooth to detect nearby devices (which requires the location permission) in order to discover the controller and then tell it which WiFi network to join and what credentials are needed. That's a pretty standard approach.

@jakob I just found this little note at the bottom of the country availability support page: I am getting “The item you were attempting to purchase could not be found.” error when I try to make a purchase in the Stadia app on Android? This can happen when there is a mismatch in your Google Play country and Stadia country.  To resolve this, please create a new payment profile in Google Payments for the country you use for Google Play. You can do this by adding a valid form of payment. Stadia customer support will then be able to assist you in changing your Stadia country. Alternatively, you can   request a change to your Google Play country   to align your Google Play country with your Stadia country.
Yeah that sounds like there may be an issue somewhere upstream from your local network.
@Murdoch I had read about but subsequently completely forgotten that feature. Thanks for reminding me!   https://support.google.com/wifi/answer/9541371

Unfortunately I haven't come across anything which describes what you're seeing, but I'll keep an eye out and report back if I do!

@dak I'm still waiting on my Stadia controller, but I was able to access the exit prompt by holding the XBox button on my 360 controller.
I saw someone mention that uninstalling and reinstalling Chrome improved things dramatically. Maybe first try using an incognito window and/or browser reset first to see if that helps?
It sounds like it may not (yet?) work with Chromium: https://community.stadia.com/t5/Stadia-on-Chrome/Does-it-work-on-Chromium/m-p/1324 Can you try installing Chrome instead? https://www.google.co... See more...

For what it's worth, I used about 23GB in a couple of hours of gaming last night:

Are you still seeing this? I encountered this a lot yesterday but haven't been able to reproduce this morning. Maybe they tweaked it on the server side?
Do you see any more if you scroll all the way to the bottom of the Store tab and tap the See all option above that last row of game cards? I see 22 games there (not counting bundles).
Maybe it got stuck in the same clogged pipe as a lot of invite codes?
Have you tried switching the payment method attached to the subscription through Google Pay? https://pay.google.com/gp/w/u/0/home/subscriptionsandservices It looks like I can change mine there.

Are you talking about Google Play (where you purchase apps and games for Android) or the Google Store (where you purchase Google hardware)? Stadia payment methods are configured through Google Pay. When attempting to purchase a game through Stadia, I do appear to have an option to use my Google Play credit in addition to the cards I've added to Google Pay, but I don't see a way to apply Google Store credit towards a game purchase.
