But I only played with it on a Ubuntu and Windows 10 system both running Chrome. As stated above iOS is not supported yet.
I don't own the game (yet) but on Reddit I see some people posting pictures playing this game.

It's strange that Ubisoft you have to contact Stadia because it looks like the game is bugged. Don't think Stadia can do anything about it because something ingame is causing this.

Sure Ubisoft should work with Stadia to troubleshoot.
Think you have to watch if a new update is going to fix this or contact support again.

I use Gsuite to for my family to get things setup with my own domain etc. It would be nice if Google offered a Family plan to transfer things to using "normal" account but still able to use a custom email adres.
But then again now we have new email addresses using gmail.com. Maybe a email alias for it?
For now it is this or no Stadia / YouTube Premium Family.

Did you claim this game while having Pro? Did you just buy the upgrade for the game but don't have Pro anymore? If this is the case you cannot play the base game so you don't have access to the Grid Ultimate DLC.
Or did you buy the complete bunddle the link you are sharing is the Bundle. Please note that Stadia shows the normal Grid game as picture in your game list. But if you start the game you will have all seasons available.

Still don't think that is going to happen on Stadia any time soon. Because when using the Steam you are using your own hardware (compute) and with Stadia it has to provide you multiple Stadia instances which costs money.
But please let me encourage you to explain this functionality and send it to Google through the Stadia App. Go to Explore and scroll down and tap on Send feedback. This is a neat feature indeed!
If you want to play with better graphics because of VP9 you could try to use the Stadia+ extension on Chrome to force VP9.
This puts some extra load on your cpu but works pretty well.
The easiest way to verify it is your WiFi is to connect with a ethernet cable.
Maybe you have ethernet port or usb ethernet dongle laying around...

Other thing you could try is starting a incognito Chrome tab and try Stadia. Sometimes caching and cookies can be bad for streaming Stadia.

Maybe check the privacy settings over there.
Did you try to put your CCU's in a DMZ or NAT? Maybe the Eero has firewall/threat detection has some hard time with two heavy streams at the same time?
Do you have this issue only on the input with the Chromecast Ultra? If so you could you check if you have your Vizio TV in Gaming mode for the Chromecast Ultra, this could help.
Did you try hard resetting the Chromecast Ultra and setting it up as a new device?

Please try the hardware reset mode (just holding the button for a while until the light turns white).
I had this issue before but it was ISP related... My internet provider had the right speeds but the latency wasn't consistent. They fixed it after showing them the issue I had with the pings when doing speedtests over and over again. But I read you have checked this already. Though it worked only after hard resetting the Chromecast Ultra.
Don't think that is going to happen because the other gamers use their own account. You should have a license for both copies you are trying to play. Only of a publisher specifically want to support...

Only of a publisher specifically want to support Google Stadia Family... The way you are describing it the other player uses the same account? If that is the case Google needs to support account sharing... I don't think it is going to happen.
