I recently upgraded my android phone from a Xiaomi Mi8 to a Xiaomi Poco F3.
Unfortunately the pop-up for activating the touch controls doesn't appear after launching a game and I can't control anything.
Does someone might have a clue what the problem is and how to fix it?

I recommend trying to enable experimental mode within the Stadia app. This may or may not resolve your particular issue, but it's worth a shot. To do so, tap your profile icon in the top-right of the Stadia app, then scroll down to "Experiments." See if there is an option there to enable play on your device. Report back when you can!

Just open stadia.google.com in Chrome on mobile without activating desktop-mode.
Hi @Clockwise, Try to clean the Application cache by going into your phone settings / applications / Stadia / memory
In addition to what HatDroid already mentioned, I recommend as well trying less invasive steps like restart or looking for Android updates or Stadia app updates first before moving on with clearing the app cache/data.

I tried all steps suggested but the touch control pop-up still does not show up.
It seems the stadia app thinks there is a controller connected but it isn't.

Hi again, @Clockwise. After doing a bit of research, I suspect that the secondary operating system present on your device (MIUI 12.x) is what may be causing this interference. You may have some success installing previous versions of the Stadia app, as others have reported in the past, but please note that this is not an official solution. I wish I could offer additional assistance here!
On Xiaomi mi10t pro it's not appear too ;(
Another POCO F3 here with same problem. The App think a controller is connected. And nothing can be controlled when entering the game.
