As far as I know, Apple has denied any cooperation with streaming services such as Xbox game pass or Stadia. This article describes it good. Therefore I believe this might be why Stadia App is not working on iOS.
What you can try though is the Stadium Browser App for iOS, because that one works with Stadia from what I heard.
