I have Family Sharing enabled and my kids have stadia accounts but they don't show up on the Chromecast stadia app.
The solution is to get an old phone or Android tablet and add the kid google account to it. Then, just download the stadia app and in the account menu will be Add to chromecast option.
And then remove the kid account from the phone and do it all over again for the next kid.
@markelltm There is a workaround but it is not that easy.
You can create more profiles on your phone.
So instead of adding a Google Account to your current profile create a new user on your phone with the kids gmail address.
Now you can login with the kids profile and open the Stadia app to add these accounts to your Chromecast Ultra.
It is a bit of a workaround but does the trick.
You'll need to give a few more details. Like, what's not showing up? The kids or the games?

I've gone through the work around for adding a kid on an old device. And they can see the games in their own profile on said old device, but now on Chromecast after linking their profile it still says to "Use the Stadia mobile app to add games and play them here." But there is no "add game to chromecast" option in the app, you have games or you don't.
They have to have a phone or tablet, be signed in, be using the stadia app and be using Family Link app from google play store. Its similar to kids having to ask permission for games from the Play store. I'm assuming you're using Family Link
You need to add their Stadia account to the Chromecast. So far as I've found, the only way to do this is with the Stadia app which means your kids' accounts will need to be logged in.
I am having this exact issue. The games show up in their phone, but on the chromecast it's saying I need to use the mobile app to add games. I've shared everything within my login, I have the parental controls set up to allow for her to play whatever without permission. I have no idea what else to do here and Google doesn't seem to have any info on this other than what I've already tried to do.
Likewise, this seems like a potentially popular wish, for family use. And it seems like there is intended support for this scenario, it just seems buggy. they allow you to add more profiles and the games should clearly be showing up, but they're not.

Stadia, any upcoming releases to improve the user experience for family members?
I have two younger children (9 and 6 year olds) and when they go to playboy their account, they get a message to pick a game from another device. Since the don’t have phones and it feels like it takes forever, I just keep letting play on my account. I have no plan to get them their own phone or table. I just want them to quickly and easily play stadia games on their own account through the two chromecast we have in the house.

I think this is exactly the issue, why does an account need to be temporarily added to an android device to be able to add to chromecast?
Again, are there any improvements to usability planned?
This is totally broken since when you add a child account you need to verify it using the parent account and with two factor authentication you are unable to login to do this since the phone is in the context of the new child account. It is a total mess!
