I can run latest stable chrome under any up to date Linux image with 720p mode and get visual and input artifacts and eventual black screen and "Mic is no longer in use" message for some reason; like others have been reporting for months. Same connection, same machine, 720p mode still, but Windows 10 and Chrome, and flawless play...
Has anyone looked in to this? I'm not the first to report it.....

I'm not going to help to much, but I play everyday in GNU/Linux with Brave (and Stadia Enhanced extension) and have no issues.
I've just test with a vanilla Chrome, and it seems run flawless in 1080. I guess your problem is showed time running. Are you sure it is not related with your machine and decoding acceleration?
It's Xubuntu with Chromium and Vaapi patches. I've tried Chrome Stable too.
As I said same machine and network or my M1 Mac and same network and it's flawless even in 1080 mode. My Chromecast Ultra same network is also great
