I have been experiencing this weird issue, when i play against doctor and get these cursed skillchecks, the game displays that im hitting the button in the right time but I still fail the skill check. In the first clip I want to “snap out of it”, but after hitting the skillcheck, it fails (that is why my character screams. In the second clip I heal someone and I clearly hit a Great skillcheck but then the game displays it as a good skillcheck. Does anyone experienced this issue before?

I possess DBD both on Stadia & Steam.
I never had what you expose in your first incident, both on Stadia & Steam.
But I don't think it's linked to Stadia here. The capture does shown this isn't linked to input lag but to the game itself. Maybe you should contact Behavior Support.
Concerning your second incident, it's a known issue in DBD and I also get it both in Stadia & Steam.
DBD is probably the only game where I feel input lag TBH.
Skillchecks are way harder on Stadia than on Steam.
There's a skill check delay when playing on stadia ( if you play from anything other than Chromecast Ultra)
Another person made a post about this a while ago. I experience the same issue and even reported it in the dbd bug forum but was entirely ignored. In my experience it doesn't happen every match, just some. The issue seems to be the skill check visual is innacurately displayed, slightly, sometimes I can even miss it entirely but it still counts as good. It's definitely not an input delay thing since you can visually see you hit them in the white area.
I wonder if it's not a Behavior that volunty delay ingame skillchecks to calibrate it with Stadia input delay. But that wouldn't explain why it's present not in every game. In my case, it's in all games.
