Say for example I buy and play Red Dead Redemption 2 on Stadia for a few months. However, after those few months I buy Red Dead Redemption 2 on Steam or something. Can I transfer my RDR2 game data from Stadia to Steam?
No, you cannot cross-save in RDR2. Currently, Rockstar does not permit cross-save or cross-play for RDR2; including RD online. (As far as I know)
Bungie does permit cross-save for Destiny 2. So you can play on the same account across different platforms including Stadia. I don't know about other games though.

Probably not. You can currently do that with ESO, but it might be one of the only games currently with that level of crossplay.
So how do you export an Eso save?
From my understanding ESO uses it's own cross save ability.

There isn't a easy way to get your save games. And if you can most of the are not cross platform compatible.
If a publisher makes it possible to use cross platform saves it mostly done from the could of the publisher themselves.
But you can always ask for a complete Google account download with the link that Rairobest_78 provided.
