Google tried to give me a refund for my stadia but original payment details didn’t work , so they emailed me a link to update them, but every time I click on it it say ‘Hmm something went wrong’ , do you know how to resolve this.

The link basically guides you to pay.google.com and you'll find a notification dot there in the top right corner, so you can also try to manually navigate to that webpage and fix the notification that way.
If that doesn't help, try logging your Google acccount on pay.google.com out and in again, try again then.
You can also try another browser or an incognito-window of your browser to see if maybe an extension interferes with it.

Thank you , still not getting any joy , I don’t know its because When bought the stadia I didn’t have a Google account , bought it as guest using an outlook email. Not sure what to do in that circumstance, I’ve added payment detail to my current Google account , but don’t know if Google will recognise me with the stadia purchase when I didn’t buy with a gmail address.

That may be a bit tricky then, but since you got the refund email it seems that Google is at least trying to provide you with a refund.
Is the solution I provided in this thread maybe an option for you? Would be something you could try if you did the order as a guest order without a Google account.
My information had been updated and they haven't refunded my money yet...
