Games/Hardware were bought on an old joint account I no longer use nor have access to. Pay.google.com showed it was refunded there.
Can I choose an alternative payment method even if that card account is active?
I have this exact same question. Since Stadia started sending out refunds, there was no check performed to see if the original form of payment was still active or not. What happens when the refund is submitted to an inactive debit/credit card?
You both can check with your bank in this case. If the refund went through successfully (which can still take up 3-5 days, sometimes even longer), then the bank may have received the money. In case the refund is not successful, you would get an email from Google to ask you to provide an alternate payment method.

If the refund fails, you will receive an email with the link to provide an alternate payment method. In my case, these emails arrived after 1.5 weeks, but it may be different for other people, so I'd give it 2-3 weeks in your case just to be sure.
Alternatively you can also monitor pay.google.com in case you don't receive any email, you would get a notification in the top right corner there once the refund fails and you need to "fix" it, so by clicking on the notification you can also provide an alternate payment method.
Otherwise if you never get anything it's still possible that the refund was successful in the first place which means the bank may somehow have gotten your money.

1st, thank you for trying to help, 2nd, as previously said I don't have access to the joint account as it was refunded there. When calling the bank, they can't legally transfer it back since my name is no longer on the account.
