I purchased a game that comes with a year of Stadia Pro. Why am I still being charged for Stadia Pro every month?

which game did you actually purchase? As far as I know there is no game that gives you 1 year Stadia Pro subscription for free.
If I am wrong and there is, you would probably need to cancel your current Pro subscription and then redeem this 1 year-free-Stadia-Pro one to get it.
In case you misunderstand something, here are the things again that you get for your Stadia Pro subscription. Maybe you meant something in regards of claiming free games with Stadia Pro?
