My problem is that i've been living in France for a few years, there I had my google play account and stadia, associated with the payment profile from there. Now i've moved to spain so i changed the country of my google play acc, created a new payment profile in spain and when I choose to delete the old payment profile (the french one) it tells me that I will lost access to all the transactions and services from stadia (and some other things too).
So i don't know how can I proceed, because I cannot even buy games from mobile, probably because of this misalignment between google pay, profiles, stadia, google play...

If you have changed your country already to the new country, can you try to reinstall the Stadia app and then try again to purchase a game?
Usually when you have the second profile already created, that should be enough to purchase games on the new profile. Sometimes I heard it can take up to 24 hours until the Google servers have registered that too.
I don't think it's necessary to delete your old profile. As you mentioned, you would lose some stuff as well (you can check here what you'll lose). I am not sure though if you would also lose the games you purchased, it doesn't seem so, but not quite sure here. I heard from other players though who had the same problem like you that it worked after they've deleted the old profile, because this seems to force your account to the new profile, but I can understand if you want to keep your old profile.
