I'm pretty sure what I'm asking is not possible from what i've read so far but I'll do it anyways:
If I buy a game on Stadia do I actually get the license so I can also redeem it on Steam/Origin/etc. or are purchases tied to Stadia?
I'd really like to play a few hardware hungry games on Stadia until I got the bucks for upgrading my hardware. Once I've upgraded my PC I'd like to play these games locally on my own hardware.
Since Stadia has a very limited library I really don't want to lock myself into that ecosystem and seeing how Steam handles Origin and Uplay games i figured this might be possible.
If you buy a game on Xbox, do you get a license to play it on Playstation? Point being, Stadia is not a PC. The closest analogy is that it's a console in the cloud. Once you've bought a game on Stadia, you can play it on any device that supports Stadia (including a browser on a PC – that's how I play Stadia myself).

Yes, I agree with @JohnZoidberg you essentially get a license to the game to play on the platform where you purchase it. That's how game purchases work on most platforms. Those ones you mentioned don't support cross-platform licenses either AFAIK meaning if you purchase a game through the Epic Games Store you do not also get a Steam license. One notable exception is Ubisoft Connect which is a multi-platform subscription model where you get to play their games on both PC and Stadia as part of the same subscription.
I didn't see a single company that provides cross platform licenses so far.
